Green Salad with Green Goddess Dressing and Blackened Tofu

This was a really great dinner. The green goddess dressing is tangy and creamy and works perfectly with the mix of crisp and tender lettuces, sliced cucumbers, and shredded snap peas. I topped the salad with diced avocado, toasted almonds and blackened tofu. A nice piece of crusty bread topped with sauteed mushrooms made for the perfect compliment.




Green Goddess Dressing

1/2 an avocado
juice of 1 lemon
4 green onions
1/2 cup soft tofu or vegan mayo
1/2 cup fresh parsley
1/2 cup fresh dill
1/4 cup olive oil
salt and pepper
splash water to thin if needed

Puree everything in the blender or food processor.  Let flavor meld for a bit before tossing in your salad. You could leave this dressing thick and serve it as a dip as well.



For the salad. Toss your lettuces, cucumbers, snap peas and other goodies with the dressing. Top with diced avocado and blackened tofu.

Garlic Tofu with Hoisin Broccoli & Sesame Mock Duck with Eggplant and Shiitakes

This dish was brought on by a strong hankering for some greasy Chinese take-out. I think I was able replicate all the delicious flavors without deep frying everything in sight. Still, a good greasy orange tofu will forever live in my heart as the best damn take-out delight.

Garlic Tofu with Hoisin Broccoli

1 block extra firm tofu, pressed and cubed
4 cloves garlic, sliced relatively thin
salt
oil for frying

1 head broccoli, cut into florets
2 carrots, cut on a bias
1 onion, rough chop
2 cloves garlic, smashed
1 tbsp soy sauce
3 tbsp Hoisin sauce
2 tbsp oil

Get a pan on over med heat add oil and start to fry the garlic. Add the tofu. Brown on all sides, season with salt and pepper. For the veggies, stir fry everything, starting with oil and garlic, then onions, then the rest. Add the sauces when veggies are nearly done.

Sesame Mock Duck and Eggplant with Shiitakes


1 can mock duck, get at most Asian grocers
1/2 large eggplant, cut into chunks
1 box shiitakes, sliced
1 onion, rough chop
3 cloves garlic
1 tbsp sesame oil
2 tbsp soy sauce
1 tbsp fermented black bean sauce
1 tsp agave nectar
black pepper
brown rice flour for dusting the mock duck

Get a pan on over high heat. Thinly coat mock duck pieces in brown rice flour, then sear on all sides. Remove from pan. Add a little more oil then the eggplant pieces. Stir fry until almost done. Add garlic, onions and shittakes. Stir fry for about 3 minutes, then add eggplant and mock duck. Add the sauces and stir fry for about a minute or two more.

Serve with brown rice.

Pan Seared Balsamic Tofu, Spinach and Sundried Tomato Quinoa, Sweet Sofrito

So I decided to whip up a sofrito with a surplus of tomatoes that I had. I made it simple and delicious by roasting it in the oven alongside the seared tofu.



Tofu-----> Vegan Worchestershire sauce, 2T, Balsamic vinegar, 4 T, olive oil, 4 T ,garlic, 2 cloves minced, or 1 T powder, seasoned salt, 1T, Nutritional yeast, 1/4 cup, 1 block extra firm tofu. Marinate in all ingredients for a half hour or more. sear in hot pan on both sides. sprinkle with a little extra nooch before cooking to form a little crust.

sofrito----> Onions, Tomatoes, garlic, carrots, bell pepper, salt, pepper, olive oil, agave syrup, Fresh basil and parsley added at the last minute

quinoa----> 4 cups salted water, 1 1/2 cups quinoa. boil water add quinoa and 2 T olive oil and minced garlic. After finished cooking add chopped sundried tomatoes and fresh spinach that will wilt perfectly in the quinoa. Finish with more olive oil and seasoning.

Assemble---> Eat---> Enjoy
